- 12 chicken wings (or pre-cut chicken lollipops)
- 2 tablespoons ginger-garlic paste
- 1 tablespoon soy sauce
- 1 tablespoon red chilli sauce
- 1 teaspoon black pepper powder
- 1 teaspoon red chilli powder (adjust to taste)
- 1 tablespoon vinegar or lemon juice
- 1/2 cup all-purpose flour (maida)
- 1/4 cup cornflour
- 1 egg
- Salt to taste
- Oil for deep frying
- 1 tablespoon oil
- 1 tablespoon finely chopped garlic
- 1 tablespoon finely chopped ginger
- 2 tablespoons soy sauce
- 1 tablespoon chilli sauce
- 1 tablespoon tomato ketchup
- 1 teaspoon vinegar
- 1 teaspoon sugar
- 1/4 cup water
- 1 teaspoon cornflour mixed with two tablespoons water (slurry)
- Spring onions for garnishing
Step 1: Prepare the Chicken
- If using chicken wings, cut and shape them into lollipop form by pushing the meat to one end (or buy ready-made chicken lollipops).
- Wash thoroughly and pat dry.
Step 2: Marinate the Chicken
- In a large bowl, add chicken, ginger-garlic paste, soy sauce, chilli sauce, black pepper powder, red chilli powder, vinegar/lemon juice, and salt.
- Mix well to coat all pieces.
- Cover and refrigerate for at least 1 hour (overnight marination gives the best flavour).
Step 3: Coat the Chicken
- In another bowl, mix all-purpose flour, cornflour, and a pinch of salt.
- Beat the egg and add it to the marinated chicken.
- Now coat each lollipop evenly in the flour mixture. Shake off the extra flour.
Step 4: Deep Fry the Lollipops
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, carefully drop in the chicken lollipops.
- Fry until they turn golden brown and crispy (about 6–8 minutes).
- Remove with kitchen paper to absorb excess oil.
Step 5: Prepare the Sauce
- In a pan, heat one tablespoon of oil.
- Add chopped garlic and ginger. Sauté until fragrant.
- Add soy sauce, chilli sauce, ketchup, vinegar, sugar, and water.
- Mix well and bring it to a simmer.
Step 6: Thicken the Sauce
- Add the cornflour slurry while stirring continuously.
- Cook until the sauce thickens and becomes glossy.
Step 7: Toss the Lollipops
- Add the fried chicken lollipops to the sauce.
- Toss quickly to coat all pieces well.
- Garnish with chopped spring onions.
🥳 Serving Suggestion:
- Serve hot as an appetiser.
- Sprinkle some sesame seeds for extra flavour.
- Pair it with extra chilli sauce or a simple garlic dip!
👨🍳 Pro Tips:
- Crispier lollipops: Double fry them (fry once until pale, rest, then fry again till crisp).
- Extra spicy: Add finely chopped green chillies to the sauce.
- Healthier version: Bake or air-fry the lollipops instead of deep-frying.
